This apple crisp is so yummy and makes your whole house smell like fall. It even has a nutrition boost with some added flaxseed, but no one needs to know its anything but dessert!

Topping Ingredients
¼cupoat flourheaping ⅓ cup old fashioned oats, blended to flour
½cupold fashioned rolled oats
2tbspground flaxseed
¼cupdark brown sugar
¼tspcinnamon
¼tspsalt
¼cupcold butter, diced into small cubes
Filling ingredients
3mediumgranny smith applespeeled, cored, ¼-inch thick slices, halved
Preheat oven to 350 degrees F. Generously grease an 8x8 baking pan with nonstick cooking spray. Set aside.
To make the topping: Mix the oat flour, oats, brown sugar, cinnamon, salt and ground flaxseed in a large bowl until well combined. Add in the pieces of butter and use your hands to squeeze and combine until the mixture becomes crumbly and resembles wet sand. There will be clumps, this is fine. (Or, cut in the butter with a pastry cutter.)
Place topping mixture in the fridge and begin making the apple filling.
To make the filling: Place sliced apples, maple syrup, cornstarch, cinnamon, and vanilla extract in a large bowl and toss to combine. Allow to sit for 5-10 minutes.
Place the apple mixture in the prepared pan and sprinkle evenly with topping.
Bake for 45-55 minutes, or until topping is golden brown and filling is bubbling.
Remove from oven and cool 10 minutes on wire rack.
Serve warm, with vanilla ice cream!
