In a blender, combine all ingredients except cheddar cheese
Bring 4 cups of water to a boil in a pot on the stove
Put a silicone muffin tin on a baking sheet. Spray each muffin cup well with cooking spray
Pour egg mixture evenly into all 12 cups. Fill them almost to the top.
Divide the shredded cheese evenly into all 12 cups. Press the cheese down into the liquid
Put in the oven, and then carefully pour boiling water onto baking sheet to surround the muffin tin. I used a glass liquid measuring cup with a spout to do this.
Bake for 23-28 minutes, or just until eggs are firm.
Remove CAREFULLY from the oven...the water on the tray is going to make this feel treacherous.
Notes
The nutrition stats are calculated per egg bite, but a serving would likely be more than 1 egg bite (depending on if it is a kid or adult portion!), so you can multiply to get accurate stats for 2 or 3, etc!
