Add to a parchment lined baking sheet, drizzle oil over top and mix it up to get all pieces coated with oil. May need an additional tsp
Spread out on baking sheet and sprinkle evenly with sea salt
Bake for 25 minutes or until soft and fork pierces potato easily

I calculated the nutrition facts as if you're quartering the sweet potato for a toddler-sized serving. I ate the whole thing myself for one adult serving, but you can adjust as needed depending on who you're feeding!
