What if I told you that you probably have the ingredients in your pantry/fridge to whip up a simple, nutritious 5-minute snack that will fill tummies, satisfy sweet teeth, and have everyone in your family asking for more? Well, I’ve got good news. My no-bake bites with chocolate chips are now your answer to the never-ending question, “what can I have for a snack!?”

Why I Love This Snack

I love how quick these no-bake bites with chocolate chips come together. I love how nutritious they are (oats and nut butter are actually a killer macronutrient combo). And I love that you don’t need anything fancy to create a quick and delicious batch of goodness!

It’s also the perfect thing to keep in the freezer for those times they need a snack NOW. We like them straight from the freezer! I like to make them teeny tiny when I store them in the freezer so they’re like little bite sized treats.

No-Bake “Cookies” with Chocolate Chips

These have a cookie dough vibe BUT just to be clear these are definitely healthy tasting! Since we’re skipping the butter and refined sugar and using oats as a base, it’s giving “healthy cookie dough” not “OMG INDULGENT AND RICH” cookie dough.

My kids still gave them a rating of 8.5/10 (my daughter) and 9/10 (my son)! But I just want you to know what to expect.

This recipe starts with pulverizing your own quick oats to make a powder. You don’t need a fancy food processor to do this (although here’s my favorite one if you’re in the market). You can actually just use a blender

Then you’ll add the other ingredients in, roll your mixture into bite-sized balls, and boom! You’ve got finger-food-sized snacks for hungry little hands to grab and gobble up. I hope they leave a few for you, too!

Ingredients Needed

All you need is:

  • 1 heaping cup of quick oats
  • 2 tbsp hemp seeds
  • 1/2 cup peanut butter
  • 2.5 tbsp maple syrup
  • 1 tbsp avocado oil
  • 1 tsp vanilla
  • small handful mini chocolate chips

Optional: a small handful of sprinkles (I used Trader Joe’s which are free of artificial colors)

If you don’t want to use chocolate chips, you could use raisins, dried cranberries, or just sprinkles!

  1. First blend oats into a powder. 
  2. Add oat powder and remaining ingredients to a medium mixing bowl. Stir well.
  3. Use a small cookie scoop, melon baller, or teaspoon to form dough into small balls.
  4. Store in the refrigerator for 3-4 days or freeze for longer.

Recipe FAQs

Can I use oat flour instead of blending my own oats?

Yes, you can! They are essentially the same thing. Just use a scant cup instead of a heaping cup when you measure.

Can I use a different nut butter?

For sure! Sub in your favorite nut butter (or non-nut butter like sunflower seed butter or granola butter to make these school-safe). You just don’t want to choose one that’s on the dry side, since we need the nut butter to help the bites stay together.

Can I make it dairy free?

Yep! Just get dairy free chocolate chips, or sub in another mix-in like raisins, dried cranberries, or dried blueberries for a different flavor.

Picky eater tips

Picky Eater? Try this!

If your picky eater is sensitive to texture, you can leave the hemp seeds out or blend them along with the oats. Or you can try adding in ground flaxseed instead of hemp seeds! Alternatively, just skip the seeds altogether and add an extra 2 tablespoons of oats.

Another pro tip: you can pretty much customize these no-bake chocolate chip cookie dough bites to make them however your family /picky eater will eat them. I did peanut butter and chocolate chips because that’s a surefire win in my house, but you could also add in whatever your kid’s favorite mix-in is! Like shredded coconut, peanut butter chips, white chocolate chips, etc. 

I love that you can refrigerate them, or make a huge batch at once and freeze them for easy, prepped snacks in the weeks ahead!
