Chocolate Chip Oatmeal Breakfast Cookies

Cookies for breakfast? Yep! You heard me right! And I don’t mean the sugary cookie crisp breakfast cereal of the 90’s. I mean real, solid nutrition- in cookie form- that checks all my boxes for a filling, nutritious breakfast! You’ve got to try these chocolate chip oatmeal breakfast cookies!

Why you need to make these asap

Let’s be honest. Who wouldn’t love cookies for breakfast? I love these healthy oatmeal breakfast cookies because I have a sweet tooth that can be activated morning or night! I like a savory breakfast every now and then, but I usually crave a sweeter breakfast- and so do my kids!

It’s also a nice creative way to use oats – my all time favorite whole grain! My daughter NEVER wants a bowl of oatmeal, but she always says yes to these breakfast cookies.

Chocolate Chip Oatmeal Breakfast Cookies

Since I don’t want my kids eating actual Chips Ahoy for breakfast, I came up with these oatmeal breakfast cookies. They don’t have a ton of sugar- just from ½ of a banana! I add some extra protein in and some nut butter for a dose of filling fats and voilà! A breakfast that my kids and I both love AND that will keep them full and energized throughout the morning.

Ingredients Needed (for your kids’ soon to be favorite breakfast!)

  • 1/3 cup quick oats
  • 1/2 medium or large banana
  • 1 tsp baking powder
  • 1 tbsp unflavored protein (I use vital proteins collagen)
  • 1 tbsp natural peanut butter (you want one that’s drippy)
  • 2-3 shakes of cinnamon 
  • Sprinkle of mini chocolate chips

How to Make These Easy Chocolate Chip Oatmeal Breakfast Cookies

  1. Mash banana, and stir together all ingredients (except chocolate chips) in a bowl with a fork. 
  2. Preheat air fryer to 360 F for 2 minutes.
  3. Scoop cookie dough onto a small square of parchment paper and press into a cookie shape. 
  4. Top with mini chocolate chips.
  5. Put in the air fryer for 7-9 minutes. Check after 4 minutes. If it’s getting too brown, turn down the temp to 350 F for the remaining cook time.

Note: each air fryer is a little different so you may need slightly less or more time, or a higher temp than 360. I wish I could give a foolproof set of instructions for everyone!! I would just watch it the first time you make it to see how it looks! It should get brown and crispy on the edges, but you don’t want to enter burnt territory.

Recipe FAQs

Can I use another nut butter?

Always! Pick your favorite nut butter or the one that your kids most readily accept. I usually opt for ones that are just ground up nuts and try to avoid extra added sugar, because I find that they’re naturally sweet enough. But I always say, the best nut butter is the ones your kids will eat. The pros outweigh the cons here for me! 

What should I serve these oatmeal breakfast cookies with?

You’re getting full permission from me to just serve these cookies for breakfast, as they actually have a pretty good macronutrient breakdown. If you want to get them a little extra nutrition (and stay on theme), offer these with a glass of milk! You’ll get some extra protein and fat that way, and cookies and milk are a classic combo. And I always aim to get some extra fruit in so if you have some on hand, serve it on the side.

Picky Eater Tip

If cookies for breakfast didn’t already pique your child’s interest, feel free to add in whatever will! I have thrown in some sprinkles for my picky eater because that’s usually enough to get him to try anything! 

These cookies don’t have to stay at breakfast either. Make them at lunch, or enjoy as an after school snack!

  • 1/2 banana, large or medium
  • 1 tsp baking powder
  • 1 tbsp unflavored protein, I like vital proteins collagen

  1. Hi! Is it necessary to use the nut butter?? We hate the taste of any kind of peanut/almond/sunflower butter… which makes things like this or energy balls basically impossible! Also, are these crispy??
