We’re taking it back to the basics today. This is a staple that you need! It’s something that babies, toddlers, older kids, teens, AND adults can all eat and enjoy: roasted diced sweet potatoes.
Why I love this recipe
I made these for a friend’s family when they had a new baby. I was thinking of their toddler daughter, since my one year old (at the time) would just devour sweet potatoes when I made them like this.
She messaged me right after they ate and said she NEEDED this magical sweet potato recipe because she had never seen her daughter happily eat them before!
And I’m happy to say, it’s such a simple recipe to make. Especially if you have a veggie chopper! Prep is so fast that way.
I pretty much grab a couple sweet potatoes every time I go to the grocery store now. My kids like them WAY better than squash or Brussels sprouts, and I love that we’re all getting a great mix of some macronutrients and micronutrients in one item.
Roasted Diced Sweet Potatoes
So this is about as simple as it gets: sweet potato, oil (I used avocado but olive oil works great, too!), and some sea salt. That’s all you need for delicious, baked sweet potatoes to exit your oven in about 25 minutes.
Ingredients Needed
All you need is:
- 1 large sweet potato, peeled
- 1 tbsp avocado oil (or olive oil)
- Sprinkle of sea salt
I don’t peel it when I make it for myself because I like to eat the skin, but if I’m making it for toddlers, I would peel it!
How to make this recipe
- Preheat oven to 400 F.
- Wash and peel sweet potato.
- Cube the sweet potato, preferably using a veggie chopper
- Add to a parchment lined baking sheet, drizzle oil over top and mix it up to get all pieces coated with oil. May need an additional tsp depending on the size of your sweet potato.
- Spread out on baking sheet (make sure they’re not all on top of each other) and sprinkle evenly with sea salt.
- Bake for 25 minutes or until soft and fork pierces potato easily.

What’s the difference between sweet potatoes and regular potatoes?
Sweet potato has always been a big win in my house because my kids got a kick out of it being orange and they liked that it was a little sweeter than regular potatoes.
Nutritionally, it’s pretty similar to a regular potato with a little more of a few nutrients like vitamin A. (No shade to the regular potato though, which is also higher in certain nutrients like potassium!)
Expert Tips
You absolutely have to have a veggie chopper if you want to make quick work of dinner prep. I use it for potatoes, sweet potatoes, onions, peppers, zucchini, tomatoes, carrots, celery, and more!
Sweet potatoes are actually quite versatile. They can be savory- like sweet potato fries with garlic powder, salt, and paprika- OR they can be made sweet by adding a sprinkle of cinnamon!
They also make great components of burrito bowls, tacos, or salads! Make a few to throw in other recipes and simplify your time in the kitchen!
