Cottage Cheese Egg Bites

Cottage cheese is having a cultural moment. It has been in the spotlight for a while now, and I have to admit that at first, I was hesitant to get on board. I mean, I love cottage cheese plain (or with some fruit, etc). But I was a little skeptical that she could become a pasta sauce or an ice cream. But here I am, making cottage cheese egg bites. And I gotta tell you, the hype is real!

Why I Love These Egg Bites

There are too many reasons to love this cottage cheese egg bites recipe. You know I love simple recipes with simple ingredients. You know I hate spending ages in the kitchen. And you also know I care a lot about the nutrition of the foods we eat!

If you love the Starbucks egg bites, you’ll love these cottage cheese egg bites too.

I made them PLAIN because if you know my kids you know they like everything PLAIN. Picky eaters typically do not enjoy foods with multiple textures together. That’s why casseroles or soups with chunks can be so tricky for them. So if that is your kids, follow this recipe exactly as written.

But next time I make these, I’m going to add broccoli to a few of them for myself!

Cottage Cheese Egg Bites

These cottage cheese egg bites come together quickly and easily. They’re also a protein powerhouse!

Between eggs and cottage cheese, they pack a major protein punch and aren’t too shabby in the other categories either. This is an easy handheld breakfast that you can feel great about serving to all ages.

Ingredients Needed

  • 8 large eggs
  • 1 cup whole milk cottage cheese
  • 3/4 cup cheddar cheese, shredded
  • 1/2 tsp salt
  • 1/2 tsp pepper

If you want to get fancy with these cottage cheese egg bites, feel free to add in anything that you like in your eggs/omelets. Veggies, other cheeses, herbs, even some ham or a sprinkle of diced up bacon.

How to Make Baked Egg Bites

  1. Preheat the oven to 325 degrees F. 
  2. In a blender, combine all ingredients except cheddar cheese.
  3. Bring 4 cups of water to a boil in a pot on the stove.
  4. Put a silicone muffin tin on a baking sheet. Spray each muffin cup well with cooking spray.
  5. Pour egg mixture evenly into all 12 cups. Fill them almost to the top.
  6. Divide the shredded cheese evenly into all 12 cups. Press the cheese down into the liquid.
  7. Put in the oven, and then carefully pour boiling water onto the baking sheet to surround the muffin tin. I used a glass liquid measuring cup with a spout to do this.
  8. Bake for 23-28 minutes, or just until eggs are firm.
  9. Remove CAREFULLY from the oven…the water on the tray is going to make this feel treacherous.
  10. Let cool for 5 minutes, and then use a butter knife to carefully slide around the outside of the egg muffins to remove from the pan.

Cottage Cheese Egg Bite Recipe FAQs

Can I use a low-fat cottage cheese?

Yes, you can. But I prefer both the texture and the nutrition that comes from using whole milk cottage cheese. It’s a lot creamier and you get not only the protein, but the fat that helps keep you full and satisfied for longer. 

Why do I have to bake them with boiling water around them?

I know this step seems fussy, but I promise it’s worth it. The boiling water bath helps them cook evenly/heat to distribute evenly so that these cottage cheese egg bites come out smooth and fluffy. It’s like having a fancy sous vide without having to buy, own, or operate the sous vide!

Recipe Tips and Tricks

Serve these cottage cheese egg bites for breakfast with a piece of toast and a side of fruit for some carbohydrates, fiber, and micronutrients and you’ve got yourself a pretty balanced meal for kids and adults alike.

You can also pop these in the refrigerator for two-four days and reheat them as you go. And if you want to make a big batch and store some in the freezer, they also reheat great in the oven for the next 2 months!

For a toddler, I’d probably re-brand these as egg cupcakes. Because even though they taste nothing like a cupcake, it just sounds more fun! I would also serve it cut up with a fun food pick or two to encourage them to give it a try.

The nutrition stats are calculated per egg bite, but a serving would likely be more than 1 egg bite (depending on if it is a kid or adult portion!), so you can multiply to get accurate stats for 2 or 3, etc!
